Ingredients
2tspolive oil
1onion,large, diced or two small
2poblano peppers,seeded and diced
4ozgreen chilis,mild, canned, not drained
¾lbchicken breasts,diced
19ozwhite kidney beans
1cupcorn
1½tspchili powder
½tspcumin
½tsporegano
2cupschicken broth,reduced sodium
3tbspcilantro
⅔cupsour cream
Preparation
Dice chicken into ½-inch cubes.
Add olive oil to a dutch oven. Soften onion and peppers over medium heat until translucent but not brown.
Add remaining ingredients except sour cream. Cover and simmer for 25 minutes.
Remove from heat and stir in sour cream and cilantro. Serve with desired toppings.
