Ingredients
1½cupwhite whole wheat flour,or regular whole wheat flour
2tspbaking powder
½tspsalt
2tbspsugar
1large egg
1½cupcoconut milk,or lukewarm milk
⅓cupvirgin coconut oil,melted, or 5 tbsp of melted butter
½tspvanilla extract
Preparation
Preheat the waffle iron.
In a medium bowl, whisk together the whole wheat flour, baking powder, salt, and sugar.
In a separate bowl, whisk together the egg, coconut milk, coconut oil and vanilla extract.
Pour the wet ingredients into the dry ingredients, then mix just until combined. The batter will be a little lumpy.
Cook the waffles as directed by the waffle iron manufacturer.
Serve warm, and enjoy!
