Ingredients

6cupsromaine lettuce,chopped

2small chicken breast

2eggs,hard boiled, quartered

4slicesbacon,diced

1avocado,sliced

1pear,sliced

½cuppomegranate arils

¼cupfeta cheese

2tbspfresh orange juice

2tbspcanola oil

1tbspwhite wine vinegar

2tsphoney

½tsporange zest

1pinchsalt

Preparation

Mix vinaigrette ingredients together in a jar. Set aside.

Cook bacon over medium heat in a skillet until crispy. Remove and drain on paper towel lined plate. Leave 1 to 2 tablespoons of grease in the skillet.

Season chicken on both sides with salt and pepper. Cook over medium high heat in the pan of bacon grease for about 5 minutes per side or until cooked through. Slice when cooled down.

Place lettuce in a large bowl. Add the chicken, eggs, pear, bacon, avocado, pear, pomegranate, and feta.

Combine all vinaigrette ingredients in a bowl.

Drizzle vinaigrette on top, toss, and serve. Enjoy!
